Repairs for the Hot Side of Your Kitchen
The cooking line takes the most abuse in any kitchen: constant heat, grease, spills and cleaning chemicals, shift after shift. When a fryer won’t heat or an oven bakes unevenly, the menu suffers right away. Most cooking-line failures come down to a handful of parts: igniters and pilots, thermocouples and thermopiles, gas valves, thermostats and probes, heating elements, contactors and fans. ALAS Appliance Repair has repaired commercial equipment in Dallas–Fort Worth since 2019. We find the actual cause, give you a written quote, and start the repair once you approve it.
We work on almost all commercial cooking equipment brands sold in the U.S., including Vulcan, Southbend, Wolf, Imperial, Blodgett, Pitco, Frymaster, Henny Penny, Keating, Star, APW Wyott, Rational, Montague, Hatco, Alto-Shaam and Cleveland.
Common problems
What’s Wrong With Your Commercial Cooking Equipment?
These are the cooking equipment problems we see most often in Dallas–Fort Worth businesses, with the causes a technician checks and a quick, safe check you can do before you call.
| Symptom | Common causes a technician checks | Guide |
|---|---|---|
| Fryer won’t heat or won’t light | Pilot or ignition failure, failed thermocouple or thermopile, gas valve, tripped high-limit, thermostat or controller fault; on electric fryers, failed elements or contactors | Confirm the gas valve to the fryer is open. Reset the high-limit only as the manufacturer’s manual allows.Possible causes a technician checks: Pilot or ignition failure, failed thermocouple or thermopile, gas valve, tripped high-limit, thermostat or controller fault; on electric fryers, failed elements or contactors Schedule a diagnosis |
| Fryer overheating or temperature swinging | Failed thermostat or temperature probe, controller fault, sticking gas valve, failing high-limit | Check the oil with a separate thermometer. If the oil is smoking, shut the fryer off and call.Possible causes a technician checks: Failed thermostat or temperature probe, controller fault, sticking gas valve, failing high-limit Schedule a diagnosis |
| Oven not heating or baking unevenly | Failed igniter or hot surface igniter, gas valve, thermostat, convection fan motor, worn door gasket or hinges, failed elements | Note whether the burner lights at all, or lights and then shuts off. That tells the technician where to start.Possible causes a technician checks: Failed igniter or hot surface igniter, gas valve, thermostat, convection fan motor, worn door gasket or hinges, failed elements Schedule a diagnosis |
| Range burners or pilots won’t stay lit | Clogged burner ports or orifices, failed thermocouple, weak pilot, gas valve, spark igniter fault | Let burners cool and check the ports for grease or food. Clogged ports cause uneven, weak flames.Possible causes a technician checks: Clogged burner ports or orifices, failed thermocouple, weak pilot, gas valve, spark igniter fault Schedule a diagnosis |
| Griddle or charbroiler heating unevenly | Clogged burners, failed zone thermostat, gas pressure problem, failed elements, warped griddle plate | Check which zones run cold. A single cold zone usually points to that zone’s burner or thermostat.Possible causes a technician checks: Clogged burners, failed zone thermostat, gas pressure problem, failed elements, warped griddle plate Schedule a diagnosis |
| Steam table or warmer not holding temperature | Failed heating element, thermostat, low or dry water wells, control or wiring fault | Check the water level in the wells and verify food temperature with a thermometer. Hot food must hold at 135°F or above.Possible causes a technician checks: Failed heating element, thermostat, low or dry water wells, control or wiring fault Schedule a diagnosis |
| Combi or convection oven error codes | Scale in the steam generator, failed fan motor, water supply or drain problem, probe or controller fault | Write down the exact error code and the model number before you call.Possible causes a technician checks: Scale in the steam generator, failed fan motor, water supply or drain problem, probe or controller fault Schedule a diagnosis |
| Gas smell, yellow flames or popping burners | Gas leak, poor combustion, misadjusted air shutter, clogged burners, failing gas valve | If you smell gas, shut off the gas to the equipment, don’t use switches, leave the area and call your gas utility or 911.Possible causes a technician checks: Gas leak, poor combustion, misadjusted air shutter, clogged burners, failing gas valve Schedule a diagnosis |

Repair or Replace?
Igniters, thermocouples, thermostats, gas valves, elements and fan motors are usually worth repairing on commercial cooking equipment. Replacement is worth discussing when the body, firebox or griddle plate is badly warped or rusted through.
Usually worth repairing
- An igniter, thermocouple or pilot has failed
- A thermostat or controller needs replacing
- A fan motor or heating element has failed
- The body and cooking surfaces are in good shape
Worth weighing carefully
- The firebox or oven cavity is rusted through
- The griddle plate is badly warped
- Repairs keep repeating on the same unit
- Parts are no longer available for the model

Commercial Cooking Equipment Repair FAQs
On a gas fryer, the usual causes are a pilot or ignition failure, a failed thermocouple or thermopile, a gas valve problem or a tripped high-limit. On an electric fryer, failed heating elements, contactors or the thermostat are most common.
A fryer that shuts itself off is often tripping its high-limit, which protects against overheating. That can be caused by a failed thermostat or probe, a controller fault or a sticking gas valve. A weak pilot or failing thermopile can also drop out during cooking.
Uneven baking usually comes from a failed convection fan motor, a weak igniter or burner, a thermostat that is out of calibration, or a worn door gasket letting heat escape.
A pilot that won’t stay lit often has a failed thermocouple. Burners that light weakly or unevenly usually have clogged ports or orifices from grease and boil-overs.
The FDA Food Code requires hot-held food to stay at 135°F or above. If a steam table or warmer can’t keep food there, the elements, thermostat or water level should be checked.
Yes. We repair gas and electric ranges, ovens, fryers, griddles, charbroilers, salamanders, steam tables and warmers.
Shut off the gas supply to the equipment if you can do so safely, don’t operate switches or open flames, get everyone out and call your gas utility or 911. Once the area is safe, we can diagnose and repair the equipment.
We repair the cooking equipment itself. New gas piping and gas line connections should be handled by a licensed plumber.
Daily cleaning by your staff makes the biggest difference. Beyond that, having burners, pilots, gaskets and thermostats checked and calibrated a few times a year catches small problems before they shut down the line. Combi ovens also need regular descaling.
Yes. Our commercial service hours are 8 AM to 7 PM, and after-hours and emergency service is available at an additional charge. For an after-hours emergency, call us directly so we can arrange a technician.
Every call starts with an on-site diagnosis. The technician finds the cause and gives you a written quote for the repair. The diagnostic visit is a separate charge from the repair, and no repair work starts until you approve the quote.
Repairs carry a 90-day warranty, or 6 months for commercial maintenance plan members. If your equipment is still under the manufacturer’s warranty, check with the manufacturer first.
